Desserts can be Healthy Too!
Every summer evening deserves a sweet ice cream treat!
But if you’re trying to cut down on excess calories and sugars, traditional ice cream can be a hard option to stomach. You’re spending all your sugar counts on one treat and it can limit you later on.
When you’ve got a craving for something icy, creamy, and delicious, these nice cream sandwiches are the perfect option! You’ll be tucking these away for a hot day and your kids will be begging for a few more after a day at the pool!
With just four ingredients these sandwiches are easy to make and even easier to eat!
Have Dessert and Eat it Too!
Dessert is one of those things that seems to be easier to buy just because it cuts down on the time you need to prep, bake, and finish each one. Luckily for you, they’re also one of the easiest to find hacks to cut down on the time needed!
Dough or Dough Not
Many types of dough can be mixed up and frozen! Freeze it all in a large tub, pull it out to thaw, then scoop, bake, and serve when convenient. Whether you’re making traditional cookies or a gluten-free option, mix it up beforehand and pull it out when you’re ready to bake.
Buy in Bulk
When you’re ready to bake, there’s nothing worse than looking in the pantry only to find you’re missing a key ingredient. Buying many of your favorite baking supplies in bulk gives you plenty to use when you’re getting ready to bake! Store extras in the freezer or pantry, well sealed of course, and use them at your convenience.
Choose Alternatives
Many baking ingredients can be swapped or subbed for healthier options that are more easily found in and around your kitchen. You can use bananas, applesauce, and other alternatives to take the place of less healthy options. This can also give you variety when you’re baking and may even create a better product at the end! Instead of wasting your time on the way to the grocery store to find the exact ingredient, you can swap it out to save some time!
Invest in Good Equipment
You can spend a lot of your time trying to mix up hard doughs by hand. Investing in good equipment like a food processor or blender can cut down on your mixing time quickly! Choose one that fits in with the counter space you have available and is easy to use for each recipe you want to try. You’ll be able to bring together doughs and prep ingredients without all the elbow grease that usually goes into the process.
Nice Cream Sandwiches
This recipe makes two servings and is a great sweet treat for the whole family! The ingredients are simple and you might even have a few of them already around the house. Whip up a batch or two or three and have them handy when you need to satisfy a sweet tooth!
Ingredients:
1 cup frozen avocado chunks
2 large frozen bananas
¼ teaspoon pure vanilla extract
8 large soft gluten-free cookies
Add avocado and banana to a high speed blender or food processor. Puree it all until smooth, stopping to scrape down the sides as needed.
Immediately move the nice cream onto the flat side of 4 of the cookies. Press the remaining cookies on top to make 4 sandwiches.
Place the sandwiches in a freezer-safe container, then cover. Freeze for 4 hours or until nice cream has firmed.
Storage:
These sandwiches keep in the freezer for several weeks! You’ll be able to pull them out and enjoy at your leisure. The avocado makes it creamy and fresh tasting and keeping them in the freezer will keep them cold and fresh.

No one wants to go without some ice cold treats during the summer or when things start to get hot! Even in the middle of winter, a cold, icy, creamy treat can hit the spot after a long day out and about.
